Over the past week, Samantha and I have tried out a raw food diet. I’m going to summarize it by saying that raw food diets are hard.

We did come up with a pretty tasty meal though, something we’ll revisit even when we aren’t eating just raw food. Maybe with some chicken on top.

Carrot Fettuccine with Avocado Garlic Sauce

(Makes two bowls full)

Ingredients:

  • Maybe like six carrots. Enough to fill the bowls once they’ve been turned into ribbons
  • Two handfuls of spinach
  • Three or four cloves of Garlic
  • Half an Avocado
  • One teaspoon Tahini
  • One tablespoon Lemon Juice
  • One teaspoon Dijon Mustard
  • One tablespoon Slivered Almonds
  • Salt and Pepper to taste
  1. Peel the carrots, then continue peeling them into the bowls until you can’t peel anymore.
  2. Put the Garlic, Lemon Juice and a bit of water in the blender and whir them ’til frothy.
  3. Add the Avocado, Tahini, Lemon Juice, Almonds, Mustard and enough water to make it work. Whir it ’til smooth.
  4. Whir in Salt and Pepper.
  5. If you want to eat this warm, (And if you’ve spent any time at all eating only raw food in the middle of winter, you do) get a pot of water boiling. Place a metal mixing bowl on top of the pot.
  6. Mix the Carrot Ribbons, Spinach and the stuff in the blender into the hot bowl. Keep mixing until the carrots are warm.
  7. Put everything in the bowls. Eat.
